
Where it comes from
Our chicken is Label Rouge, from the pine forest of the Landes: at least eighty-one days outdoors. It grows slowly, and France's INAO audits it. The guinea fowl and the duck come from the same forest, year-round. Turkey, capon, poularde and goose only exist around the holidays, so that's when we have them. The coquelet and the quail carry no label; we'd rather tell you that ourselves. Game is seasonal: deer, wild boar, hare, pheasant, following the hunting season. Ask at the counter what's in this week.
Natural weight
Free-range poultry varies in weight: a chicken doesn't weigh an exact two kilos, and a pheasant even less. We work in weight classes and prepare your order within them.
What makes it special
Game is lean and dark, from animals that fed themselves. Boar in autumn, hare in winter. The slow Landes birds have firm flesh; a six-week chicken doesn’t reach that flavour.

Why not all year? Biology and patience. These birds only exist when a farmer starts in spring and works at them slowly for months. Year-round would only be possible industrially, and we don't do that.
Order in time: the birds arrive fresh in the days before Christmas and before New Year.
Game
From the first wild duck in August to the last hare in January: game follows the hunting season, not demand. Roe deer, red deer, wild boar, hare, pheasant, partridge and wild duck arrive through approved game-handling establishments, inspected and with their papers. Out of season there is no game.
