Poultry: Label Rouge from the Landes forest

Our roasting chicken comes from the Landes forest, in Gascony, the south-west of France. There the birds run completely free across large spaces under the pines, for a minimum of 81 days. A slow-growing breed, yellow flesh with a firm, marbled texture. The Atlantic wind keeps the forest oxygenated and preserves the natural balance the birds live in. Their feed is at least 80 % cereals, mostly farm-grown corn, no GMO. The general Label Rouge floor is 75 %; the Landes specification sets 80 %. The chickens add what they find themselves in the undergrowth: herbs, seeds, insects. The Label Rouge cahier des charges sets the minimums, and INAO, the French institute for origin and quality, runs the independent audits. Our supplier is Peyriguet, the poultry brand of Maïsadour, an agricultural cooperative from south-west France. Not an anonymous supplier. We can give you the name at the counter and point to the forest on a map, and if you ask about the label, we'll explain it. During the hunting season the same supplier also brings our game: roe deer, red deer, wild boar, hare, pheasant, partridge and wild duck, from approved game-handling establishments, inspected and with their papers.
