Our lamb comes from L'Agneau Bio des prés d'Ardenne, a group of organic sheep farmers around Virton, in the Gaume, within the Limousin Bio d'Ardenne cooperative and distributed, like our pork, through PQA. The lamb is certified organic. The ewes and their lambs are on pasture whenever the weather allows, and the lambs are raised with their mothers, on grass and forage. Ewes lamb once a year, so the lambs grow with the calendar, up to a year old, always lamb. The farmers drive the animals to the abattoir at Virton themselves, to keep the stress of transport as low as possible. Welfare is built into how they work, not added on afterwards.
